Cooking with Less Kilowatts: Caramel Apple Mini Muffins for Halloween

But did you know that changing what you do in the kitchen can make an impact on your monthly electricity bill? Each week, I will help you find ways to cook using less energy while still getting a satisfying, flavorful meal. Trust me – I won’t just tell you to do everything in the microwave. I’ll help you cut down on your energy consumption.

This week’s recipe is for a batch of delicious mini muffins loaded with apple and caramel. This dish full of flavor and fun for the whole family to make together. And while it’s a great Halloween treat, it’s also perfect for any cool fall day.

The only ingredient missing from this mini muffin that truly belongs in a Halloween treat is chocolate.

I love the caramel- and candy-coated apples-on-a-stick you often find at fall fairs, so I decided to use that as inspiration for a tin of fall-inspired mini muffins. The use of apple pie spice, ground ginger, and a little sea salt pares perfectly with the chewy caramel candies, fresh apples, buttery biscuit dough, and sweet apple cider. And if you’re not familiar with apple pie spice, It should be available on the spice aisle at your favorite grocery store, as it’s simply a blend of cinnamon, all spice, and nutmeg.

Important Tip: don’t let the biscuits sit too long in the mixing bowl once the wet mixture is poured over them. Since you don’t want them to get soggy – immediately move them to the muffin wrappers once they have been tossed and coated.

This is a low energy use recipe because the oven temperature is relatively low, and the cooking time is under 20 minutes. And crucially to your energy use, there is no pre-baking of the apples or making the apple cider and butter sauce on the stove top. Just a little microwave help and some oven time makes this recipe a winner!

Caramel Apple Mini Muffins for Halloween

Ingredients:

  • 1 Package of canned biscuit dough (this recipe uses one with some butter already included)
  • 1 Medium-sized apple (this recipe used Golden Delicious)
  • 2 tbsp. Packed light brown sugar
  • 2 tbsp. Apple cider
  • 4 tbsp. Melted butter
  • ½ tsp. Apple pie spice
  • ¼ tsp. Ground ginger
  • 1/8 tsp. Sea salt
  • 12 Chewy caramel candies
  • 12 muffin tin wrappers
  • Halloween decorations

We are excited about any concoction that marries apples, caramel, spices, and butter.

1) Measure out the ingredients as directed, including cutting the apple into small chunks.

2) Place the butter in a medium-sized mixing bowl. Melt the butter in the microwave.

The microwave is your friend!

3) Add the brown sugar, apple pie spice, ground ginger, and sea salt to the melted butter. Microwave the bowl for 40 seconds to heat up. Stir to mix the ingredients thoroughly.

We recommend cutting each biscuit into quarters (or smaller!).

4) Cut the biscuits into small chunks as shown using a knife or kitchen scissors.

5) Add the apple chunks to the biscuit chunks and mix well.

Remember – once you toss the biscuits in the butter mixture, don’t let them sit for too long, or they’ll get soggy!

6) Pour the butter mixture over the apples and biscuits. Toss to coat.

You should be able to locate plenty of Halloween and/or fall-themed muffin wrappers this time of year.

7) Heat oven to 360° F. Line each muffin tin spot with a Halloween themed muffin wrapper.

Don’t bury the caramel into the biscuits too deeply, or it will melt and seep through the bottom of the wrapper.

8) Add a small amount of filling into each wrapper. Place a caramel in the middle of each tin.

And you don’t want to overfill the wrapper, or the biscuits won’t cook through properly.

9) Add more filling until the wrapper is slightly over-filled.

Sure, they’re not perfectly formed muffins, but they do taste great!

10) Bake for 16 minutes.

You can probably find similar Halloween directions near where you found the muffin wrappers.

11) Decorate with any Halloween decorations and serve.
