Lamb is a classic protein people often feature for Christmas dinner. But whether you choose to roast a leg of lamb or whole racks of lamb chops, these lamb dishes often take hours of oven time. Combine the cost of the cooking time with the cost of the ingredients, and you have an expensive meal on a day when some families prefer something quick, easy, and efficient. Besides – there are toys to play with and sports to watch!

If you want to enjoy some delicious lamb for Christmas this year, try this week’s recipe for lamb chop lollipops served with a delicious mint Chimichurri topping. Need to feed a lot of people this year? Just double the recipe. If you preparing another holiday protein – be it a ham, turkey, or prime rib roast, one chop per guest is plenty.

The flavors used to marinate the chops is echoed in the sauce. The flavorful garlic shines through with the red wine and seasonings. You could still serve some classic mint jelly alongside the lamb chops, but with how lovely the sauce turns out, it really isn’t even needed.

I recommend using cast iron cookware for this recipe because of the even heating and ability of cast iron to hold heat in as well. This really helps when you transfer the skillet from the stove top to the oven to keep the cooking time as low as possible.

The wine gives great flavor as it combines with the butter and crispy bits that stuck to the pan after searing the meat. But if you don’t like cooking with alcohol, simply substitute in a few shakes of Worcestershire sauce and ¼ cup of your preferred stock.

Christmas Skillet Lamb Lollipops with Mint Chimichurri

Lollipop Chop Ingredients:

  • 6 Bone-in, Frenched lamb chops (Lollipop cut)
  • 1 tsp. Sea Salt
  • ½ tsp. Fresh cracked black peppercorns
  • 4 Garlic cloves, minced or pressed
  • 1 tbsp. Olive oil
  • 1 tsp. Red wine vinegar
  • 1 tsp. Parsley flakes
  • ½ tsp. Ground oregano
  • 2 tbsp. Butter
  • ¼ c. Red wine (Cabernet or Pinot Noir)

Mint Chimichurri Ingredients:

  • ½ Bunch flat leaf parsley (approx. 2 cups)
  • ½ c. Mint leaves
  • 2/3 c. Olive oil
  • 5 Garlic cloves
  • ½ tsp. Ground oregano
  • ¼ tsp. Onion powder
  • ½ tsp. Red chili flakes
  • 3 tbsp. Red wine vinegar
  • ½ tsp. Sea salt
  • ½ tsp. Black pepper

Directions:

1) Prepare the Chimichurri ingredients. Place them in a food processor.

2) Process the sauce until fully blended. Let it sit at room temperature while making lamb to let flavors combine. The sauce can also be made in advance and kept refrigerated until needed.

3) For the lamb chops, combine the sea salt, black peppercorns, parsley flakes, ground oregano, pressed garlic, and olive oil.

4) Spread the mixture on both sides of each chop and rub it into the meat.

5) Preheat the oven to 400° F. Melt the butter in a large cast iron skillet over medium high heat.

6) Once the skillet is hot and butter is melted, place the marinated chops on the skillet. Sear on each large side for 3 minutes.

7) Sear on skinny side for 2 minutes.

8) After all the sides are seared, add the wine. Then move the skillet to the oven, and let the chops cook for 9 minutes for a medium level of doneness.

9) Serve lollipop lamb chops topped with the minty Chimichurri sauce.
