Cooking with Less Kilowatts: Slow Cooker Bratwurst and Potatoes with Christmas Ale

I’ll help you cut down on your energy consumption.

As you can probably tell by perusing many earlier entries in this series, I love brainstorming new slow cooker dishes, but I also working with the flavors and ingredients of Christmas. These two don’t always get along, as certain classic holiday dishes often require lots of time on the stove top and/or oven developing flavors.

Luckily for you, this week’s low energy use recipe bridges that gap in style. Not only will you use less energy with this week’s recipe, but it’s also uses a lot of budget-friendly ingredients like potatoes and sausage.

With all the other holiday cooking you’re doing between Thanksgiving and Christmas, you probably have quite of a few of today’s ingredients on hand, which can make your shopping list (and budget) a little smaller. The fresh rosemary and sage will liven up this hearty meat and potatoes meal, while the chicken stock, onions, and garlic are provide the necessary blend of flavors and aromatics.

While you could use any dark ale for this dish, we heartily recommend a seasonal Christmas ale from your favorite local or independent brewery. While you should always support the small businesses in your area, the holiday shopping season is the perfect time to shop.

And since the only appliances you’ll need are the slow cooker and the microwave (just for melting the butter), I might have created a near-perfect holiday-themed low energy use recipe!

Slow Cooker Bratwurst and Potatoes with Christmas Ale

Ingredients:

  • 5 Bratwurst-style ready-to-cook sausage links
  • 3 lb. Fingerling potatoes (or any small potatoes)
  • 1 Medium yellow onion, sliced
  • 3 Garlic cloves, sliced
  • 1 tbsp. Fresh sage leaves, chopped
  • ½ tbsp. Fresh rosemary leaves, chopped
  • 1 Stick of butter (or 8 Tablespoons)

  • ½ tsp. Kosher salt
  • ¼ tsp. Celery salt
  • ¼ tsp. Black pepper
  • 12 oz. Christmas Ale
  • 1 c. Chicken stock
  • 1 tbsp. Worcestershire sauce

Directions:

1) Prepare the ingredients as directed above.

2) Rinse the potatoes in hot water, drain them, and pat them dry.

3) Melt the butter by placing it in the microwave for 30 seconds on high.

4) Combine the Christmas ale, chicken stock, and Worcestershire sauce in a separate container.

5) Place the sliced onions on the bottom of the slow cooker.

6) Place the potatoes on top of the onions.

7) Pour the herbs, seasonings, and melted butter over the potatoes.

8) Place the bratwurst links on top of the potatoes.

9) Pour in the liquid ale mixture.

10) Cook on high for 4 hours or until sausage is cooked through.

This recipe will feed 5-6 people, and it should leave some leftover potatoes for another meal.
