Cooking with Less Kilowatts: Slow Cooker Sweet and Spicy Stuffed Chicken

But did you know that changing what you do in the kitchen can make an impact on your monthly electricity bill? Each week, I will help you find ways to cook using less energy while still getting a satisfying, flavorful meal. Trust me – I won’t just tell you to do everything in the microwave. I’ll help you cut down on your energy consumption.

I typically present lighter, healthier recipes in January to help people with their New Year’s resolutions. But with this Cooking with Less Kilowatts recipe, I opted for a “cheat meal” that’s simple, low energy use, and doesn’t completely blow your diet!

We’re going to use savory ingredients like cream cheese and bacon, but pair them with high-protein and low-calorie boneless skinless chicken breasts and a sweet and spicy glaze that brings everything together. By working with items like reduced fat or fat-free cream cheese, low sodium bacon, or even turkey bacon, you can keep calorie count low while still making this dish feel a little indulgent.

I like to use the slow cooker because it uses very little energy, and it keeps the chicken moist. It also gives the bacon enough time to cook through and then quickly crisp up later without burning certain areas of bacon while other parts are too chewy.

The slow cooker makes this an easy recipe, but you can also cook it in the oven at 375° F for 50-55 minutes and then broil it for 1 minute on high. Just make sure the internal temperature of the chicken is 165° F before you move it to the broiler.

When you pull the wrapped chicken breasts off the pineapples, serve them right along with the finished chicken to take advantage of all the flavor that was roasted into them during cooking. Enjoy!

Slow Cooker Sweet and Spicy Stuffed Chicken

Ingredients:

  • 3 Large boneless, skinless chicken breasts (2/5-3 lb. total)
  • 6 oz. Reduced fat (or fat-free) cream cheese, softened
  • ¼ tsp. Black pepper
  • ¼ tsp. Kosher salt
  • 2 tbsp. Sweet and hot pickled jalapenos, chopped
  • 1 tbsp. Green jalapeno or Poblano based hot sauce
  • 6 Pineapple rings (from can)
  • 2 tbsp. Pineapple juice (from can)
  • 12 Long bacon slices(low sodium variety or turkey bacon)
  • 1 tbsp. Honey
  • ½ tbsp. Sriracha
  • ¼ tsp. Garlic powder
  • ½ tbsp. Pineapple preserves

1) Pat the chicken dry with a paper towel.

2) Cut the chicken breasts in half “butterfly style.” From the side, cut a pocket into each piece, but be careful to NOT cut all the way through.

3) Whisk the softened cream cheese until smooth. If you can’t easily whisk it, place it in the microwave for 10 seconds to soften.

4) Add the green hot sauce, jalapenos, salt, and pepper to the cream cheese. Whisk together.

5) Spoon some of the cream cheese mixture into the pocket of each chicken piece. Do not overfill.

6) Wrap each chicken piece with 2 pieces of bacon. Use small skewers or toothpicks to hold bacon around the chicken.

7) Place the 6 pineapple rings and juice in the bottom of the slow cooker.

8) Set each bacon-wrapped chicken piece on top of its own pineapple ring.

9) In a small bowl, combine the honey, Sriracha sauce, garlic powder, and pineapple preserves.

10) Spoon this mixture over the wrapped chicken.

11) Cook on low for 4 hours.

12) Move the 6 chicken pieces to an oven-safe pan and broil for 4-5 minutes to crisp up the bacon.

Serve with a pineapple ring and your favorite green vegetable.
