Ready to enjoy another quick and delicious homemade meal that’s easy on the energy use and preparation? This week’s featured recipe is for a lobster BLT wrap that features lemon pepper, garlic, and other spicy flavors.

Seafood and shellfish are always great protein choices for low energy use recipes because they have short cooking times, as they taste best when not cooked too long. If you’re worried about the cost involved, you can definitely substitute in shrimp for this recipe, but I only make this recipe when lobster tails are on sale at the seafood counter.

The seasoning and garlic butter sauce used for this dish are absolutely delicious on just about any protein, but it really complements the sweet meat of the lobster. I use turkey bacon in this recipe to lower the fat and calorie a bit, and it’s also an energy saver since it cooks up extremely well in the microwave. I then harmonize the two proteins with sweet tomatoes, crispy lettuce, and zingy lemon vinaigrette.

Wrap all the ingredients up in a low-carb tortilla for a tasty wrap that is still conservative on calorie count.

Spicy Lobster BLT Wraps

Ingredients (Makes 4 wraps):

  • 4 Lobster tails
  • 2 tbsp. Butter
  • 1 tbsp. Olive oil
  • 4 Garlic cloves, minced
  • ½ tsp. Kosher salt
  • ½ tsp. Lemon pepper seasoning
  • ¼ tsp. Cayenne pepper
  • ½ tbsp. Hot sauce (buffalo/red pepper style)
  • 4 tbsp. Lemon vinaigrette dressing (1 per wrap)
  • 12 Turkey bacon slices (3 per wrap)
  • 1 1/3 c. Chopped romaine lettuce
  • 1 c. Sliced and halved fresh tomatoes
  • 4 tbsp. Blue cheese crumbles (1 per wrap, optional)
  • 4 Large low carb tortilla wraps

Directions:

1) Prep the ingredients as directed.

2) Remove the meat of the lobster tails from the shells. Discard the shells.

3) Mix the salt, lemon pepper, and cayenne pepper together in a small bowl. Evenly coat every inch of the tails with the seasoning mixture.

4) Add the butter, olive oil, and garlic to a hot non-stick skillet over medium heat. Let this cook for 3 minutes until the garlic is fragrant and the butter starts turning a golden color.

5) Turn the heat to medium low and add the lobster tails. Cook for 3 minutes on the first side.

6) Turn the tails over, place a lid on the pan, and cook for 3 minutes on the second side. You want them to be firm and cooked through, but not overcooked.

7) Add the hot sauce to the pan. Toss the tails around to be coated in the sauces.

8) Turn the heat off, remove the tails from the pan, pour any extra butter sauce over them, and let them cool down.

9) Microwave the turkey bacon as directed on the packaging.

10) Cut the lobster tails into large chunks. Layer them inside the tortillas along with 3 pieces of bacon, a handful of lettuce, tomatoes, blue cheese crumbles, and vinaigrette.

11) Roll up the wrap like a burrito, stick 2 toothpicks in each side to hold together, cut in half, and serve.
