With the use of a food processor, your hands, and a knife, you can make a delicious, energy efficient meal within minutes that is full of flavor and easy to make. This week’s recipe features a classic jumbo lump crab salad stuffed into avocado halves and requires absolutely no cooking! The only energy even used for this recipe is to keep the ingredients cold in the refrigerator (but hey, that thing is running anyway) and the food processor to make the delicious dressing to toss with the crab. Anyone can make this recipe with ease and no worries about messing it up because it is essentially foolproof.

I definitely like to use the big jumbo lump crab meat for this recipe because of its sweet, mild flavor. Sometimes I like to use the other crab meat mixes which include more body or claw meat, but for this salad, the jumbo lump variety tastes best mixed with the lemony tarragon dressing and creamy avocado. Plus, this recipe is also pretty healthy. Avocados are a great source of healthy carbohydrates and fats and are the perfect serving vessel (actually my favorite serving vessel) for any crab, tuna, or chicken salad. The sweet yellow bell pepper and mild onion flavor from the white and green parts of the green onions really amp up the salad and hold well with the lemony tarragon dressing.

Jumbo Lump Crab Salad Stuffed Avocados

Ingredients (4 servings):

  • 2 Large Haas avocados
  • 8 oz. Jumbo lump crab meat
  • ½ c. Yellow bell pepper, finely diced
  • ½ c. Green onions, thinly sliced (green and white parts)
  • ½ c. Mayonnaise
  • ½ tbsp. Sherry wine vinegar
  • ¼ tsp. White sugar
  • ¼ tsp. Celery salt
  • ¼ tsp. Paprika
  • ¼ tsp. Kosher salt
  • ½ tsp. Black pepper
  • ½ tsp. Lemon zest
  • 1 tbsp. Freshly squeezed lemon juice
  • Handful fresh tarragon (approx. ¼ c. measuring cup)
  • 1 pt. Cherry tomatoes, halved

Directions:

1) Prepare ingredients as directed in ingredients list.

2) Blend the mayonnaise, vinegar, sugar, salts, paprika, pepper, lemon zest, lemon juice, and tarragon in a food processor for 30 seconds until combined.

3) Add the crab meat, green onion slices, diced bell peppers, and dressing to a mixing bowl. Toss to coat.

4) Gently break crab pieces into smaller pieces with a fork until everything is mixed together.

5) Place the crab salad in the refrigerator for 10 minutes to let the flavors combine while preparing avocados.

 

6) First, cut a small slice off both sides of the avocado to provide a stable surface so they do not roll around on the plate when stuffed.

7) Slice the avocados in half and remove the pits.

8) Gently spoon a little bit of avocado meat out of the shell as shown to make more room for crab stuffing.

9) Remove crab salad from the refrigerator, spoon it onto avocado halves, and serve with a lemon wedge and cherry tomato halves.
