Cooking with Less Kilowatts: Slow Cooker Chicken Tacos for Mother’s Day

I’ll help you cut down on your energy consumption.

Since this Sunday is Mother’s Day, I really wanted to come up with a simple and low-energy-use recipe the kids and dad can easily make for mom. Lucky for you, I’m a wizard with the slow cooker, so I created these chicken tacos inspired by Mojo sauce!

Simple and delicious chicken tacos – because you want to keep Mom OUT of the kitchen on Mother’s Day.

While the original version of Mojo was developed in the Canary Islands, I prefer the version used in Cuban cuisine that traditionally features sour oranges, cumin, garlic, and olive oil. Sour oranges are pretty difficult to find in the Houston, TX area, so I opt to do a mixture of orange juice and lime juice to get the right citrus balance. In the recipe ingredients list below, I list the Cara Cara orange, as they are sweet, a little tangy, and have a gorgeous deep pink-orange color. If you can’t find this type of orange, just use a common Navel orange.

The slow cooker is perfect for many recipes, as it uses barely any electricity, doesn’t heat up the kitchen, and is very easy to clean up (only 1 cooking vessel!). And it becomes even better for the holidays: since you just put everything in it and let it cook for several hours without interruption, you can spend more time with family!

For Mother’s Day, simply place all the ingredients in the slow cooker before you head out the door for morning festivities, and when you return home, you’ll find a super-easy homemade dinner full of love. I make preparation even easier by heating up a can of my favorite brand of refried black beans, opening a bag of pre-shredded green and red cabbage, and whipping up some quick toppings.

Sure, you can buy this stuff at the store, but these side dishes really aren’t that hard to make.

For the sour cream shown, just add 1 tablespoon of lime juice to 1 cup of sour cream along with ½ tsp. cumin and ½ tsp. coriander. I recommend mixing a little of this limey spiced sour cream into your shredded green and red cabbages to make a great slaw.

And while you can certainly purchase your favorite store brand guacamole, the recipe featured here is pretty simple. Just combine some mashed avocado with a little lime juice, diced red onion, diced Roma tomatoes, chopped cilantro, cumin, sea salt, and green Tabasco.

Ingredients:

Like so many of our Cooking with Less Kilowatts recipes, this one starts with a lovely blend of spices.

  • 4 Large boneless, skinless chicken breasts
  • ½. Diced red onion
  • 2 Large handfuls of fresh cilantro (approx. ½ c.)
  • 12 Large mint leaves
  • 5-6 sprigs fresh oregano, leaves only
  • 2 tbsp. Fresh squeezed lime juice
  • ¼ c. Fresh squeezed orange juice (preferably Cara Cara orange)
  • ¼ c. Olive oil
  • 6 Garlic cloves
  • 1 tsp. Turbinado sugar
  • 1 tsp. Sea salt
  • ½ tsp. Cumin
  • ½ tsp. Paprika
  • ¼ tsp. Black pepper
  • ¼ tsp. Red chili flakes
  • ¼ tsp. Lime zest

Directions:

Cilantro, oregano, and mint – Oh My!

1) Prepare the ingredients as described in the list above.

Fresh orange juice is the key!

2) Add all of the ingredients except the chicken and red onion into the food processor.

The chicken needs this marinade.

3) Process them for 20 to 30 seconds.

Your slow cooker can solve so many cooking problems.

4) Set the chicken breasts in the slow cooker and top them with the diced red onion.

Time to get cookin’.

5) Pour the mixture from the food processor over the chicken.

Five hours later…

6) Cook on low for 5 hours.

Please use forks (or some sort of utensil) to shred the chicken. It’s gonna be hot!

7) Remove chicken from slow cooker and pull apart using 2 forks.

8) Add the shredded chicken back to the liquid and let it rest for 20 minutes before serving.

How you decorate your tacos is up to you, but we love to pack on the flavors!

Serve this amazing chicken on flour or corn tortillas with your favorite toppings. This recipe features refried black beans, shredded cabbages, fresh cilantro, lime and cumin seasoned sour cream, and homemade guacamole!

And if Mom isn’t necessarily a fan of tacos, you can serve this chicken along with rice and beans, or over shredded lettuce with diced tomatoes, cheese, guacamole, and tortilla strips for a great salad for mom!
