To celebrate Dads everywhere this Father’s Day weekend, Bounce Energy wants to share a flavorful, creative salmon dish that’s perfect for some outdoor grilling!

This low-energy-use recipe takes less than 10 minutes to grill the marinated salmon fillets. And while this side dish pairs so perfectly with the honey wasabi, it’s so delicious you’ll be on the lookout for reasons to prepare it more often.

For a version of this meal you can enjoy when it’s cooler outside, the salmon also pairs well with wasabi garlic mashed potatoes, but today’s cool, refreshing peanut slaw is a better match for summer temperatures.

Grilling is a great energy-conscious cooking method. Since it’s done outside, you aren’t heating up the house, and you also save time and energy because you can cook so many items simultaneously. For example, I grilled asparagus alongside the salmon for this recipe, as it’s my favorite grilled vegetable to pair with these flavors.

Enjoy this complete meal that’s easy on energy use and big on flavor!

Grilled Honey-Wasabi Salmon & Peanut Slaw

Salmon Ingredients:

  • 4 Salmon fillets (6-8 oz. each)
  • 2 tbsp. Honey
  • 1 tbsp. Wasabi paste
  • 2 tbsp. Soy sauce
  • 1 tbsp. Mirin rice wine
  • 1 tbsp. Pure white sesame oil
  • 1 tbsp. Fresh ginger paste
  • 1 tbsp. Minced or pressed garlic
  • ½ tsp. Coarse ground black peppercorns
  • ½ Lime’s juice
  • 1 Green onion, thinly sliced
  • ¼ tsp. Toasted sesame seeds

1) Combine the soy sauce and Mirin into a mixing bowl. Add the honey, wasabi paste, sesame oil, ginger, and garlic to the bowl. Whisk together.

2) Remove any pin bones in the salmon. Season the salmon fillets with the ground peppercorns. Squeeze the lime juice over the peppered salmon fillets.

3) Pour the marinade over the salmon and let it marinate up to ten minutes while the grill is heating.

4) Heat the grill to medium high heat. Oil the grates to prevent sticking. Grill the salmon three to four minutes with the skin side up.

5) Flip the salmon to be skin side down and brush it with the extra marinade.

6) Remove salmon from the grill. Top with a sprinkle of sesame seeds and sliced green onions.

Peanut Slaw Ingredients:

  • 3 c. Shredded green cabbage
  • 3 c. Shredded red cabbage
  • ½ c. Crushed peanuts (roasted, salted kind)
  • ½ c. Shredded carrots
  • ½ c. Chopped fresh cilantro
  • ¼ c. Chopped fresh mint
  • ¼ c. Sliced green onions
  • 1 ½ tbsp. Packed light brown sugar
  • 2 tbsp. Rice wine vinegar
  • 1 tbsp. Lime juice
  • ¼ c. Avocado oil (or canola oil)
  • ½ tbsp. Pure white sesame oil
  • ¼ tsp. Sea salt
  • ¼ tsp. Toasted sesame seeds

1) Prepare the ingredients as directed.

2) In a small mixing bowl, add the brown sugar to the rice wine vinegar and lime juice. Stir to dissolve the sugar. Pour in the oils and sea salt. Whisk thoroughly.

3) In a larger mixing bowl, combine the cabbages, carrots, herbs, green onions, and crushed peanuts.

4) Pour the dressing over the ingredients and toss everything together. Top with a sprinkle of sesame seeds and garnish with extra chopped peanuts.

You can substitute other proteins in place of the salmon, including shrimp, scallops, Mahi Mahi, chicken breasts, or even steaks! Tweak this recipe as you see fit to use for your Father’s Day grilling, because it is so much more interesting than the regular old burgers and hot dogs.
